Breakfast
1.
Cream of Wheat (Sweet Soup of Wheat)

Ingredients
(For 2 People)
Cream
of wheat/ rava/ soji: 1 cup
Ghee: 1 tsp.
Water or milk: 2 cups
Optional spices: Sugar: 1 cup; saffron:
10 pieces; cardamom powder: ½
tsp
Optional extras: chopped almonds
and raisins: to taste

Method
1.
Roast (fry) rava in a pan for 10
minutes until it becomes reddish
brown
2. Add ghee or oil and roast for
5 minutes
3. Add boiled water or milk and
cook for 10 minutes
4. Add spices, sugar or jaggery
and raisins
5. Add cardamom powder once cooked
If
you use RAW cream of wheat you must
roast it prior to cooking (steps
#1 and 2). However, if you use pre-cooked
you can SKIP steps #1 and #2
Variations
For
spicy cream of wheat prepare the
basic spice mix in oil with tomatoes,
add this to the dry roasted cream
of wheat, then add boiling water
and cook all together. But add less
water than you would to the previous
recipe

Rice Porridge (Sweet Soup of Rice)
Ingredients
(For 2 People)
Rice
(any type will do): 1 cup
Ghee: 1 tsp.
Milk or water: 4 cups
Sugar: 1 cup
Almonds, raisins: to taste
Saffron, cardamom powder, cinnamon
leaves: to taste

Method
1.
Heat the pan, add the ghee and the
rice, roast the rice for 5 minutes
2. Blend gently in mixer or blender
3. Place mixture in cooking pot
4. Add milk and cinnamon leaves
5. Cook on low heat until rice is
tender
6. Add sugar if desired and cook
5 more minutes
7. Add saffron, raisins, almonds
if desired and stir well
8. Add cardamom powder while serving
Variations
The
same dish can be prepared using
any other grain in the same method:
roast then cook in milk or water.
You can also use vermicelli noodles
instead! The dish can be made sweet
as above or savory using the basic
spice mix and salt.

Vermicelli Breakfast

Ingredients
(For 2-3 People)
Vermicelli
(thin noodles): 1 cup
Water: 2 cups
Basic spice Mix: 3 tsp.
Salt and sugar to taste
Coriander, tomatoe, ground coconut
and fresh lemon juice

Method
1.
Crush the vermicelli
2. Roast over low heat
3. Prepare the basic spice mix in
oil with curry leaves, add vermicelli
4. Add water, salt and sugar to
taste and cook until tender
5. Add fresh coriander, tomatoe,
ground nuts, coconut and fresh lemon
juice to taste

Flattened Rice Breakfast

Ingredients
(For 2-3 People)
Flattened/
processed rice (poha): 2-3 cups
The basic spice mix prepared in oil
Tomatoes: 1 or 2
(Or potatoes, cabbage, cauliflower,
carrots etc: 1cup)
Fresh coriander
Peanut and grated coconut
Grapes, pomegranate, guava or cucumbers
if desired

Method
1.
Soak the flattened rice in water until
soft (5 minutes)
2. Prepare the basic spice mix in
oil with curry leaves
3. Add the peanuts if desired and
fry
4. Add the soaked poha
5. Add salt and sugar to taste
6. Cover and fry until it is cooked
7. Add fresh chopped coriander and
ground coconut
8. Add grapes or pomegranate as desired
9. Serve with fresh, sliced lemon
to squeeze
You
can prepare this type of dish with
any cooked grain such as rice, wheat
rawa, soji, noodles, quinoa, bulgar...as
you like.
